BREWERIES

Below are example descriptions and processes that breweries are using for their particular setup. These examples are only meant to provide ideas and are not meant to dictate what you should use in your brewery. You are encouraged to be creative and set up your processes so that they make the most sense for you!

Production Breweries

Brewery 1

      • Uses typical Fermenters and Brite Tanks.
      • Only kegs. Does not yet Bottle/Can.
      • Sells to taproom and distributes.

Brewery 2

      • Mostly Kegs. Sometimes Cans.
      • Distributes for sale and supplies a secondary Brewpub location with kegs when needed.
      • Concerned with correctly reporting keg returns and occasional dumped batches.

Brewery 3

      • Uses typical Fermenters. Carbonates in Kegs.
      • As soon as kegs are fully carbonated they are marked as sold.
      • Bottles occasional special releases.
      • Sells only to taproom.

Brewery 4

      • Brews in ~10 gallon increments. Combines three brews over the span of 1-2 days to ferment in a single 45 gallon fermenter.
      • Carbonates in a Brite Tank
      • Only makes kegs and only sells to taproom
      • Occasionally has issues with dirty kegs.

At this point the brewer combines all 3 brews using Batch Combining to record that all 3 were transferred into the same fermenter.

Brewpubs

According to the TTB, Brewpubs are different from Production Breweries in that they cannot have non-taxpaid beer inventory (i.e. an inventory of ‘ready for sale’ kegs or cases).When a brewpub uses kegs as it’s serving tanks, as opposed to a more traditional, large brite/serving tank, the kegs should be classified as its “Tax Determination Tanks”. Once beer is transferred to the kegs it is Taxpaid (aka, sold). An inventory of non-taxpaid kegs is not allowed in this scenario.

The type of tax determination tanks a brewpub uses is required to be outlined on the brewers permit and any changes to the types of TDT used need to be reflected on an amended and approved permit.

Any kegs or bottles/cans/growlers made (if allowed by your state) need to be made AFTER the beer has already been tax determined/sold to your Taproom.

Brewpub 1

      • Uses typical Fermenters.
      • Uses traditional Brite Tanks as Serving Tanks/Tax Determination Tanks.
